Mardi Gras My Way With Macros Friendly Jambalaya


Okay y'all, I LOVE miracle noodles. Like, I may have a slight obsession with them. In this recipe I used the miracle rice and it worked like a charm!

I was pretty nervy about using them, because they really don't absorb flavor or moisture. After pinteresting several different recipes, both macros friendly and traditional versions, I came up with my own recipe and put it to the test. Results? Scrumptious. Oh, and did I mention that it's totally macros friendly?!

Time: 25 minutes

Ingredients

1 1/3 cup Trader Joe's seafood blend

2 links Trader Joe's chicken andouille sausage

6 oz boneless skinless chicken breast

3 stalks celery

1 red bell pepper

1/2 cup chopped onion

1 large jalapeño (with seeds)

1 package Miracle rice

2 tablespoons coconut oil

2 tablespoons tomato paste

3-5 tablespoons chicken broth

Tony's seasoning

Garlic salt

Pepper (to taste)

Chopped cilantro (optional)

egg (optional)

Directions:

  1. Roughly chop celery, bell pepper, onion and jalapeno into desired size (I do not prefer huge chunks of veggies, I like when they are smaller and all cook down into more of a hash)

  2. Add the coconut oil to a heated caste iron skillet

  3. Add the chopped veggies and seasonings. cook down until they are tender and fragrant.

  4. Chop the sausage and chicken and add into the skillet with the veggies

  5. Continue to cook until the chicken is almost cooked through.

  6. Add the tomato paste and and chicken broth, then add the rinsed and strained miracle rice.

  7. Pour the seafood blend into the skillet and slowly stir until the shrimp turn pink.

  8. Serve on a plate with chopped cilantro, hot sauce and poached egg (I LOVE poached eggs on almost any dish; they are macros friendly, go with everything and the yolk provides a yummy creamy quality to your dish)
