Almond Meal Crusted Chicken Salad
Today was the best mid-week day of the year (thus far) because is was a SNOW DAY! As a teacher, I treasure my snow days! After sleeping in, catching up on Vanderpump Rules and working out, I was starving and ready for something fresh and delicious. The hunny had made almond meal crusted chicken a few days ago, which consisted of...
- Leftover (from the last time I made macarons!) homemade almond meal
- Some spices such as garlic salt, paprika and Tony's Creole seasonings
- 2 whisked eggs.
He cut the chicken in strips, dipped them into the whisked eggs and then covered them on all sides with the almond meal. from there they were pan fried in EVOO until crispy and cooked through --- The next time we make these, I am going to bake them in the oven to avoid the somewhat large amounts of oil these little gems soaked up!
The rest of the salad was some fresh goodies that I picked up from my favorite store, Trader Joe's - strawberries, avocado, spinach, and mozzarella. I dressed the salad with a homemade balsamic vinaigrette which was just EVOO, balsamic and salt and pepper.
This salad was super scrumptious and was exactly what I was craving! However, if you are being macros conscious, it was pretty high in fat (if you are a paleo person, I know that all of the ingredients are "good fats" but I like to keep even my good fats in balance with the rest of my macros!).
